Coconut Macaroons

Mmmm. Coconut. Sweet, baked, coconut. There's no coconut recipe simpler than a coconut macaroon recipe. These are not to be confused with macaRONS(almond meringue biscuits that people tend to spell as macaROON). These cookies are deliciously sweet and moist, where the juiciness of the desiccated coconut is retained in the cookie while the great flavour of coconut bursts in your mouth.

What's even better about these delectable cookies is that this is a one-bowl recipe. Meaning, just dump all your ingredients into a bowl, mix, and they're ready to bake. No mixer required, just a good old wooden spoon/spatula will do the job. So simple!


Again, this recipe is from Alison Thompson's recipe book "BAKE", which is soo trusty and never fails to give me a bad recipe. These macaroons are awesome. Try it to believe it!

Ingredients:
4 egg whites
3 cups desiccated coconut
1 1/3 cups superfine sugar
2 teaspoons vanilla extract
1 1/2 tablespoons apricot jam

Procedure:
1. Preheat oven to 200ÂșC. Line baking pans with baking paper.
2. Combine the egg whites, coconut, sugar and vanilla into a bowl. Microwave the apricot jam for about 15 seconds till warm. Add the apricot jam into the bowl as well, and mix thoroughly till combined well. 




3. Press the mixture into firm moulds on the baking sheet. Bake for 7-10minutes, till the cookies are slightly golden brown. 



THAT'S IT! How simple :-) They're great for coconut lovers. (Frankly, I'm not a coconut LOVER myself, I'm just O.K. with coconut. However, when it comes to these cookies... One word - irresistible.)
